So, I had the juice feast going on. It was awesome! I was feeling good, having a little detox but good. Then our super sweet seven year old made the comment: “You haven’t eaten with us in so long, Mom.” Now, combine that with the saddest most worried face you have ever seen. Heartbroken yet? Yea… So, the feast only lasted a week. Well, two days of smoothies followed by one day of water fasting. Then I juiced for five days and water fasted one more day. It was not nearly what I wanted to do, but any juicing always feels great!

I used it to transition into a high raw diet. Doing this allowed my detox/healing crisis to continue. And continue it did! Grumpy, sore, yucky feeling and low energy. Check, check, check and check. But, it’s finially letting up and I am feeling like myself again. Finally! Let this be a lesson to everyone: even vegans detox!!! HA!

So, Mama’s back! Be on the lookout for raw recipes, smoothies, juices and regular vegan dishes. It’s nice to not be snarky anymore.

Twitter is one of the latest forms of social media. Think IMs in 140 characters or less. It’s a great way to meet new people that share your interests and a super fun way to network for your business.

On Fridays there is #followfriday where you give a shout out to those people you follow that you think others should follow as well! Well, I have over 400 people that I follow. That’s a lot of posting and to me it just looks like spam when you have like 20 posts that are just for #followfriday. Enter this post.

I got the idea for this post from @m38967. She’s great, by the way. So, I’m breaking down my favorites by category for you and I’ll just link to this for #followfriday! I’m only listing those that regularly tweet good stuff. Oh, some would fit into two or more categories but I’ll only list them in one.

We belong to Costco and they send out a magazine type thing every month. There is a section where they ask a question and they post answers from people and then they have “pros” to weigh in as well. They posed the question “Should animals have the same rights as people?” in the March issue. Surprisingly there have been some enlightened responses! And there have been some idiots.

I just received the May issue (sidenote: someone remind me to find out how to opt-out of the mag) and people are still responding to the March debate. I am going to post a reply given by one Fallon Turner of Sierra Valley, CA. The emphasis is my own.

NO. There is no way that animals have the same level of consciousness as people. The person who thinks that animals should have the same rights as a human has never seen 1,500 pounds of a stark raving mad cow staring them in the face, blowing snot and then promptly running over them.
Until that stark raving mad cow can explain to why she ran over me in English, then she should stay resigned to her place in the world, that of a cow used for producing meat and milk.

I swear to you on all that is good in this world that is a verbatim quote of the entire response, other than the bold done by me. It absolutely blows my mind that this person is dead serious. Gee Fallon, think the cow was “stark raving mad” because you are abusing her and she just freaking snapped? Kudos to the cow for being fed up and acting on it!

SU-FI to you, Fallon Turner! (it’s a Dane Cook thing, Google if needed)

So, a lot of you know that I have gotten my Uncle Harvard (love you!) to give veganism a shot. I thought I would try out some of the faux meats to help him transition. He is a real carnivore and I don’t want the switch to be hard for him because of that. While I don’t advocate using many processed foods like the faux meats, there is nothing wrong with a meal here and there that do use them.

I bought a package of Tofurky Italian Sausages at Trader Joe’s last week for the soul purpose of trying a recipe or two using them to give Harvard some options he may not have considered.

I used one of the sausages in a stir fry kind of dish. For this, I sliced it into small rounds and just sauteed it with my veg. I liked the ones that got a bit crunchy, so if I ever make this again I will start the “sausages” first so they all get the crunch. The flavor is really good, but I just can’t get down with the meaty texture of faux meats. It makes me feel like I’m eating a flesh food even though I know it’s not. Know what I mean?

Anyway, these get a thumbs up just because the flavor is nice and I do think people would enjoy them when cooked this way. As long as you are ok with the meat-like texture.

Vegan Wrap-up

1 Tofurky Italian Sausage, sliced into thin rounds
1/2 a medium vidalia onion, sliced
1 red pepper, sliced
handful of baby bella mushrooms, sliced
tiny bit of olive oil for sauteing the sausage (the veg too, unless you want to do them seperately in water)
cool, crispy romaine
condiments
whole grain tortillas

This one is super simple! Slice everything beforehand, put your tortillas in the oven to warm while it’s cooking and this is on your plate in like 10 mins.

Saute the Tofurky sausages for a minute to let them get going.

Add the onion next and sautee for another minute or two.

Add the rest of your vegetables and saute until everything has reached your desired level of softness. I like my veg to still be a bit cruncy, so I don’t cook it for more than three minutes once everything has gone into the pan.

Grab a warm tortilla, fill it, add your romaine, condiments of choice and wrap it up! I highly recommend having this with a nice big salad full of dark leafy greens.

The electric color of the mustard has totally turned me off on mustard, by the way. It’s crazy!

I love, love, love green smoothies! They are an excellent way to pack a ton of nutrition into a compact form. There is no way I would sit down and eat what I put into a smoothie. It just would not be the same experience.

This smoothie is light, cool and refreshing! I especially like to have this one in the morning to get my body buzzing for the day. This is an especially good mix for the green smoothie newbie since it has a more mild taste to it.

I really hesitate to call this a recipe. Smoothie recipes are more like smoothie ideas. They’re just to plant the taste idea in your head and you run with it to customize it for you. Good stuff.

Hydrating Green Smoothie

Huge handful of baby spinach or kale (or the green of your choice)
1 red pear (I did peel it because I don’t have a super blender.)
1 english cucumber (didn’t peel this one)
at least 6 stalks of celery, leaves and all
1 inch of ginger root, peeled
enough clean water to get it going (young coconut water rocks in smoothies if you have it!)

Put it all in the blender and go to town! I don’t like to use a straw with my smoothies, but to rather gulp them from a huge glass. YUM!

I would love to hear your favorite green smoothie (or juice!) recipes!! I feel a (maybe modified) juice feast coming on.

Saturday night I made fajitas and rice from a fantastic recipe over at Hello Veggie’s Recipe Garden. They were great! I made very few changes, but I did note them in italics. Most changes were due to me forgetting to grab things at the store.

What You’ll Need:
Fajitas:

3/4 white onion, sliced, halved and separated
1 red bell pepper, sliced thinly
1 green bell pepper, sliced thinly (I left out the green pepper. I don’t do well with them.)
3 large carrots, large end sliced (I just made mine matchsticks pretty much.)
1 tsp cheyenne pepper (cayenne pepper)
1 tsp cumin
1/4 tsp chili powder
2 T canola oil (optional, may substitute with water) (I got my onion mostly done in water, added the other veg for a min and then added ~1 Tbs oil)
1/2 water, reserved for cooking

Serving suggestions: Surprising amazing fajita veggies are zucchini, broccoli, red potato, and green beans. If you have them, add them in or substitute them for carrots. I recommend onions, peppers, plus 1-3 additional veggies.
I made ours using carrots, mushrooms, onions, and fresh green beans. I wanted to have zucchini as well, but there were zero decent looking zukes at the store. This was an AWESOME mix!

Rice:

1 cup brown rice, I used long grain
2 cups filtered water
1/2 lime
1 avocado, diced
1 small tomato, diced

Ok, for my rice, I totally used wild rice. I had some quick cook stuff and time was short, so I went for it. It rocked! I had Ro Tel on top of it. No dice on the avocado at the market. I hit up Trader Joes and now I have some cute organic avocados and limes, so I’ll be doing it Jenn’s way next time for sure.

How You’ll Do It:

Bring rice and water to a boil in a medium pot on high heat. Then cover and reduce to a low simmer for 40 minutes. (Or cook according to package directions)

When there is about 15 minutes left on the rice, get veggies ready if they are not already. Use a grill pan or a large cast iron skillet to cook fajitas on. (I used a grill pan) <<----- Jenn, not me. :D

Heat your grill pan (or cast iron) on medium high heat. When hot, add oil or water (depending on if you prefer to cook fat free or not. I splurged for the oil and I believe it upped the flavor). Add all veggies together. Cook veggies for 3-4 minutes, using a fork or tongs to rotate regularly. Your grill pan or skillet should be very hot. Add cumin and chili powder next, along with a splash of your reserved cooking water to give the veggies a boost of heat. Use fork or tongs or ’shake’ grill pan on the stove to keep the veggies consistently moving as they grill. Turn heat to high and continue adding reserved cooking water as needed for steam, while moving veggies consistently. Cook for a total of about 10 minutes, add the cheyenne pepper during the last two minutes.

Serve a heaping scoop of rice and squeeze 1/2 a limes worth of juice over the rice. Top with avocado and tomato pieces. I ate my vegetable fajitas plain, without a tortilla, but feel free to eat your fajitas traditionally with a small [wheat] tortilla.

We didn’t have tortillas with ours either. And we were STUFFED! These were so good, people. You seriously need to make them. We had some Tofutti Better Than Sour Cream on top. It was amazing with or without the BTSC. They had just the right amount of spice and burn. I like to keep my red peppers crisp, especially in a spicy dish. I find that the sweet pepper helps to cut the heat and makes for a more enjoyable hot dish.
