Vegan Mama’s Sandwich Bread Recipe

This is the bread we use for just about everything. The boys like to use it for garlic bread, sandwiches, snacks…you name it. I like to mess with the flours a bit. The wheat to white ratio is higher now, but this is where it started. It’s a good mix that isn’t too dense for those that prefer lighter breads. The oatmeal adds a little texture.

I listed the ingredients in the order I put them in my machine. As it does the initial kneading, keep an eye on it. If there are little pieces that are stuck to the sides just scrape them down gently with a rubber spatula.

It’s pretty forgiving, so experiment away! Make sure you tell me how it worked out for you. :)

Ingredients
1 1/3 cups water
3 Tbs applesauce
2 Tbs sugar (Know your sugar, people! Most isn’t vegan.)
2 tsp salt
2 cups whole wheat pastry flour
2/3 cup bread flour
1 1/3 cups stone ground whole wheat flour
5 Tbs oats
2 tsp vital wheat gluten
2 tsp bread machine yeast (make a little well in the flour and put the yeast and gluten in it)

I use the sweet cycle and the medium color setting on my machine and it comes out perfect every time. Sometimes I will throw some herbs into the mix. That’s fabulous, too. Just put your herbs in with the flours and stir it around a bit before adding the gluten and yeast.

I am working on a healthier version with flax and sunflower seeds to use for their toast. I’ll make sure to put that up as soon as I get it perfect. ;)
