Happy St. Patrick’s Day! Have some colcannon!
Whether you’re Irish like us or not, you gotta love St. Paddy’s Day! So, get your green on and have a great vegan Irish meal for supper. We’ll be having vegan colcannon, Irish soda bread and boiled cabbage. Will the kids eat this? The 7 yr old will eat the colcannon and bread. The 4 yr old? He’ll eat the bread and complain about the rest. :roll eyes:
We’re homeschoolers, so we’re learning all about St. Patrick’s traditions, history and a bit of Irish heritage today. Good times!

The colcannon recipe I use is adapted from VeganYumYum:
Colcannon
(my version)
4 cups yukon gold potatoes, chopped
4 cups kale, chopped (you can use cabbage)
3 cloves of garlic, minced
3 tbs margarine (I use Smart Balance because I can’t get Earth Balance locally)
1 cup seitan, chopped
1 tsp Bragg’s liquid aminos
1 tbs nutritional yeast
2-4 tbs soy milk
salt and pepper as you need it

Irish Soda Bread
The Irish soda bread I make from Vegan Dad. The man is a genius with breads and seitan!
1 3/4 cup whole wheat flour
1 3/4 cup all purpose flour
1 tsp salt
1 1/2 tsp baking soda
2 tsp cream of tartar
1 tsp sugar
2 tbsp margarine
1 1/2 cups soy milk
1 1/2 tsp lemon juice
