Pear Spice Muffins
These are great! They are not super dense or heavy despite having so much whole wheat flour. Our 7 and 4 yr olds love these when they are still a little warm from the oven.
We tend to eat a lot of muffins around here. It’s their favorite food, I think. I’m down with it because I can sneak things into muffins that the 4 yr old would never normally eat.
Ingredients
1 cup whole wheat pastry flour
1/2 cup oat flour (this one is open for experimenting)
1/2 cup stone ground whole wheat flour
1/2 cup sugar
1 Tbs baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1 tsp vanilla extract
1 Tbs oil
1 flax egg (1 Tbs ground flax seed mixed with 3 Tbs warm water and left to sit for 5 mins)
3/4 cup soy milk or nut milk
1 pear, peeled and lightly processed but not pureed
Pre-heat the oven to 400 and ready your muffin pan/s.
Mix the flours, sugar, salt, baking powder and spices in a large bowl. Make sure you get these well mixed.
In a different bowl mix the milk, oil, vanilla and flax egg.
Add the wet mixture to the dry and stir until moistened. Fold in the pear gently.
Fill your muffin cups about 1/2 to 3/4 full and bake for about 20 mins.
Let them cool in the pan for five mins before putting them on a cooling rack for at least ten more mins.
