Vegan Express…A Review
Vegan Express, by Nava Atlas, is becoming one of my favorite vegan cookbooks! The first time I went through the book (a few months ago) I couldn’t stand it. Not a single recipe was appealing to me. I went through the entire book again and counted out how many recipes I want to try (I included ones I have made) and out of the 160 recipes there are 46 that I know I will be making. I’m fully expecting that if I count them again in a few months that number will go up even more. Funny how our tastes change, eh?
Vegan Express starts out with the customary introduction section that tells about different products and produce that we use as vegans. Good stuff for a new vegan definitely! There are nine chapters and each is prefaced by Nava’s favorites from that chapter. This is one of my favorite parts of the book. That and the meal suggestions that accompany each recipe!! She lays out one or two meals for you on every single recipe. Super handy! All of the recipes have the nutritional breakdown on them as well, so if you’re tracking your fat or calorie intake it’s all right there for you.

She covers it all and they’re all pretty quick recipes! What’s not to love?
