Tofurky Italian “Sausage” review & a recipe

So, a lot of you know that I have gotten my Uncle Harvard (love you!) to give veganism a shot. I thought I would try out some of the faux meats to help him transition. He is a real carnivore and I don’t want the switch to be hard for him because of that. While I don’t advocate using many processed foods like the faux meats, there is nothing wrong with a meal here and there that do use them.

I bought a package of Tofurky Italian Sausages at Trader Joe’s last week for the soul purpose of trying a recipe or two using them to give Harvard some options he may not have considered. :D

I used one of the sausages in a stir fry kind of dish. For this, I sliced it into small rounds and just sauteed it with my veg. I liked the ones that got a bit crunchy, so if I ever make this again I will start the “sausages” first so they all get the crunch. The flavor is really good, but I just can’t get down with the meaty texture of faux meats. It makes me feel like I’m eating a flesh food even though I know it’s not. Know what I mean?

Anyway, these get a thumbs up just because the flavor is nice and I do think people would enjoy them when cooked this way. As long as you are ok with the meat-like texture. ;)

Vegan Wrap-up

1 Tofurky Italian Sausage, sliced into thin rounds
1/2 a medium vidalia onion, sliced
1 red pepper, sliced
handful of baby bella mushrooms, sliced
tiny bit of olive oil for sauteing the sausage (the veg too, unless you want to do them seperately in water)
cool, crispy romaine
condiments
whole grain tortillas

This one is super simple! Slice everything beforehand, put your tortillas in the oven to warm while it’s cooking and this is on your plate in like 10 mins.

Saute the Tofurky sausages for a minute to let them get going.

Add the onion next and sautee for another minute or two.

Add the rest of your vegetables and saute until everything has reached your desired level of softness. I like my veg to still be a bit cruncy, so I don’t cook it for more than three minutes once everything has gone into the pan.

Grab a warm tortilla, fill it, add your romaine, condiments of choice and wrap it up! I highly recommend having this with a nice big salad full of dark leafy greens.

Vegan Wrap-up
The electric color of the mustard has totally turned me off on mustard, by the way. It’s crazy! :D

    I know exactly what you mean. I get anxious when I bite into a black bean burger or faux meat that has a meaty texture.
    I make D check it for me and reassure me that it’s not meat before I can go on eating it. Sometimes I still get queesy while

    Hi. Store bought sausages aren’t bad tasting at all, but many are not low-fat or especially nutritious either. It’s really not that hard to make a batch of your own at home. I was quite pleased with the recipe from Vegan Brunch. Have you or your uncle tried them?
